SUBSTANCE: method for preparation of crystalline maltitol and a method for preparation of solidified maltitol are proposed. Each said process includes starch milk liquefying, saccharifying of the liquefied starch milk, adding maltogenic alpha-amylase or isoamylase to the liquefied starch milk during saccharification to produce a maltose-containing syrup, molecular sieving of the said syrup to obtain a fraction with maltose content of at least 95%, catalytic hydrogenation of the said fraction to obtain a liquid maltitol-enriched product, and increase the dry matter content of the said product. Further, the method for crystalline maltitol production comprises crystallizing the liquid maltitol-enriched product, and the method for cured maltitol preparation comprises curing the liquid maltitol enriched product.
EFFECT: obtaining of a syrup with maltitol high content, low content of hydrogenated glucose and low content of hydrogenated oligosaccharides having a polymerization degree of 3 or higher.
