FIELD: food industry.
SUBSTANCE: inedible parts of apples are removed, treated with water vapour for 10-30 minutes, 0.1-1.0 % ascorbic acid is added to the resulting mass and ground to a puree state. Then the puree is wiped through a sieve with cells of 0.50-2.00 mm, plasticiser is added to the resulting mass - 0.1-5.0% by the apple puree weight, evenly distributed throughout the volume. The resulting sheet of edible film with a thickness of 1-3 mm is dried at 55-70°C for 1-3 h and cooled to room temperature. The invention allows to obtain edible films from apple raw materials with high mechanical strength.
EFFECT: good digestibility, easy chewing and high organoleptic properties.
