FIELD: food industry.
SUBSTANCE: invention relates to the food industry, preferably to double edible films obtained by processing apple raw materials. Method of producing double edible films from apple raw material is characterized in that apples are removed inedible parts, treated with water vapor for 10–30 minutes. Then 0.1–1.0 % of ascorbic acid is added to the obtained mass and ground to a puree state. Puree is wiped through a sieve with cells of 0.50–2.00 mm. Then the plasticizer is added to the resulting mass – 0.1–5.0 % by weight of the apple puree, evenly distributed throughout the volume. Second sheet is applied to the resulting sheet of edible film having a thickness of 1–3 mm, the double film is rolled, dried at a temperature of 55–70 °C for 1–3 hours and cooled to room temperature.
EFFECT: invention makes it possible to obtain an easily assimilated finished product having mechanical strength.
