FIELD: biotechnology.
SUBSTANCE: invention relates to the field of microencapsulation and discloses a method for producing microcapsules with bifidobacteria in a shell of sodium alginate. Method is characterized by, that as a shell of microcapsules, sodium alginate, chitosan and tannin are used, as a nucleus of microcapsules, a lyophilized culture of bifidobacteria is used, for example, lyophilized B. Longum bacterial concentrate. Dispersion process is carried out with constant stirring. Suspension is then sent to the crosslinking agent solution. Resulting capsules are then treated with an aqueous solution of tannin, filtered off and dried. Invention makes it possible to simplify and accelerate the process of obtaining microcapsules with bifidobacteria, increase the yield of microcapsules, to obtain microcapsules with improved physicochemical characteristics, increase the stability of the shell of microcapsules with bifidobacteria to the impact of external aggressive factors.
EFFECT: invention can be used in the food industry and agriculture.
