FIELD: food industry; chemistry; medicine; pharmaceuticals.
SUBSTANCE: invention can be used in the food, chemical, pharmaceutical and other industries. Method comprises separation of a mixture into a low-boiling fraction and a high-boiling fraction with counter-current contact of the steam stream fed for rectification with a liquid wort film flowing along a heat and mass exchange surface. On the reverse side of the heat and mass exchange surface, additional supply of heat flux is carried out to form evaporation steam. Temperature in the flowing film at the input section of the heat and mass exchange surface is maintained in the range of 55–80 °C. Ratio of the heat and mass exchange surface S1 of the input section and the total heat and mass exchange surface S is S1/S = 0.1–0.3. And the ratio of the flow rate G of steam fed for rectification to the flow rate Gd of evaporation steam formed by additional supply of heat flux from the reverse side of the heat and mass exchange surface is kept equal to G/Gd= 1–3.
EFFECT: invention enables to intensify the wort separation process through partial condensation of the rising vapours of the mixture in the upper part of the film column, as well as through evaporation of the flowing wort film with rising vapours and exhaustion from the wort film of components by supplying additional heat flux.
