FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely the sugar industry. Method for producing the sugar-containing product involves the creation of a thin layer of moist crystalline sugar, spraying the flavor solution onto sugar crystals, stirring the sugar enriched in the flavoring and drying the resulting product. As a sugar, its crystals are used, previously fractionated in a centrifugal force field to dimensions of 0.30–0.60 mm and a moisture content of 0.8–1.5 % at the exit from centrifuges, which are fed into the grooved vibrating conveyor to create a vibrating layer of 3.0–5.0 cm in thickness. A number of nozzles are mounted above the conveyor to spray onto the surface of the sugar crystals a natural flavor obtained on the basis of essential oils, in a mixture with an isomalt solution with a concentration of 30–60 % in equal proportions, supplied as a sputtering of droplets with a size of 5–15 mcm at the rate of 0.2–0.6 % by weight of sugar crystals.
EFFECT: invention provides better quality indicators of the finished product, which practically do not deteriorate during transportation and storage, it also lacks the presence of a pulverized fraction, granulometric composition has better indicators.
