FIELD: food industry.
SUBSTANCE: disclosed method for production of sugar envisaging production of diffusion juice, purification, evaporation, filtration, boiling of fillmass, centrifugation, washing of sugar crystals in the centrifuge rotor and sugar drying. Prior to loading into the rotor of the centrifuge, the fillmass is pumped to 91.5–92.0 % of dry substances in it with addition of distilled monoglyceride, its temperature is brought to 68–72 °C and loaded into the centrifugal rotor. Separation of first effluent is accompanied by inlet of air pre-treated with temperature 130–140 °C steam in separate container to temperature higher by 2–6 °C than centrifuged fillmass, after that, during the rotor braking on the surface of sugar crystals, a solution of food additives in the form of maltodextrin, or β-carotene, or stevioside, or fructooligosaccharides, or mixture thereof.
EFFECT: invention provides improvement of qualitative and physiological properties of sugar crystals.
