SUBSTANCE: invention relates to the food industry. A method is proposed for separating massecuite of the first crystallization of sugar production, including loading the massecuite into the rotor of a filtering centrifuge, separating the first outflow from sugar crystals, washing them with the separation of the second outflow and drying sugar crystals before unloading from the rotor to a moisture content of 0.8-1.5%. The loaded massecuite is preliminarily swayed by the sugar melting of the second crystallization with a concentration of 68-72% of dry matter, containing water saturated with ozone, at the rate of 3-12 mg/l. Swinging is carried out until the content in the massecuite is 91.5-92.5% of dry substances, the washing of the crystals is carried out in two stages - first with a solution of sugar clearing of the second crystallization with a concentration of 68-72% of dry substances, and containing ozone in an amount of 3-12 mg/l. The separation of the first outflow is accompanied by the introduction of moisture-saturated air into the rotor of the centrifuge, for which it is pretreated with steam at a temperature of 105-110°С in a separate container, the washing of sugar crystals with the separation of the second outflow begins 15-30 seconds after loading the massecuite into the rotor of the centrifuge with water flavored natural flavoring agent based on essential oils at the rate of 0.2-0.6% by weight of sugar crystals.

EFFECT: invention provides a higher yield of sugar, and the sugar itself acquires an attractive food flavor.
