FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Method for obtaining starch from vegetable raw materials includes grinding vegetable material, mixing starch-containing raw materials with water while stirring the reaction medium, separating the protein fractions with a solution of 0.5 N; sodium hydroxide at pH 8.5, fractionation and washing with water of the suspension, separating the starch from the supernatant by centrifugation and drying. Moreover, the separation of protein fractions is carried out under the additional influence of low-frequency ultrasonic waves with an intensity of 460±5 W/cm2 within 25±1 min. After the starch is separated, its lyophilic drying is carried out.
EFFECT: invention makes it possible to increase the yield of starch by 5–7 % in comparison with the analogue and increase the purity of starch.
