FIELD: food industry.
SUBSTANCE: invention relates to the food industry and can be used in the production of jellies having a preventive effect. Method for manufacturing jelly on the basis of Chamaenerion angustifolium is proposed, which involves mixing sugar, citric acid, agar-agar and an aqueous extract of Chamaenerion angustifolium, for the preparation of which, depending on the sum of the antioxidant substances in the aqueous extract of the representative sample, 2 to 5 % by weight of the grass of the Chamaenerion angustifolium is used, water is the rest, in order to obtain a jelly with a standardized content of antioxidant substances of 25 mg / 100 g, based on the standard antioxidant dihydroquercetin, the starting components are used in the following ratio, wt.%: water extract of Chamaenerion angustifolium 89.3; sugar 8.9; citric acid 0.7; agar-agar 1.1.
EFFECT: invention makes it possible to create jelly in the absence of artificial preservatives and colorants having a standardized content of the sum of antioxidant substances of 25 mg/100 g of jelly, calculated on the standard antioxidant dihydroquercetin, and precisely to normalize its effective and safe consumption in accordance with the recommendations of the Federal Service for Supervision of Consumer Rights Protection and Human well-being of the Russian Federation.
