SUBSTANCE: invention relates to the food industry, namely to the confectionery industry, and can be used in the manufacture of chocolate products. Proposed composition for the preparation of chocolate products, which includes cocoa mass, cocoa butter in free form, dry whey concentrate, sugar substitute – maltitol, sweetener – stevia extract, prebiotic – inulin, emulsifier – leticin, functional additives in the following ratio of initial components, wt.%: maltitol 12.56–13.04; cocoa butter 9.86–11.05; dry whey concentrate 3.43–4.9; inulin 8.62–9.86; leticin 0.39–0.45; stevia extract 0.03–0.07; as functional additives contains natural vanilla in the amount of 0.3 wt.% and the premix calcium-D3 in the amount of 1.75 wt.% or mint extract in the amount of 0.5 wt.% and vitamin premix – vitamins A and E in the amount of 0.17 wt.%; and cocoa mass – the rest. Also proposed composition for the preparation of chocolate products, which includes cocoa liquor, cocoa butter in free form, dry whey concentrate, sugar substitute – maltitol, sweetener – stevia extract, prebiotic – inulin, emulsifier – leticin, functional additives, and orange oil in the following ratio of initial components, wt.%: maltitol 12.56–13.04; cocoa butter 9.86–11.05; dry whey concentrate 3.43–4.9; inulin 8.62–9.86; leticin 0.39–0.45; stevia extract 0.03–0.07; orange oil 0.29; as functional additives contains mineral premix, including calcium, potassium, magnesium, iron, zinc, copper, manganese, iodine, selenium, in the amount of 1.41 wt.%, or vitamin premix, including vitamin E, vitamin B1, vitamin B2, vitamin B6, vitamin B3, vitamin B5, vitamin B7, vitamin C, taurine, caffeine, L-carnitine, in an amount of 0.6 wt.%, or premix magnesium-B6 in an amount of 1.41 wt. %; and cocoa mass – the rest. And also proposed a composition for the preparation of chocolate products, which includes cocoa liquor, cocoa butter in free form, dry whey concentrate, sugar substitute – maltitol, sweetener – stevia extract, prebiotic – inulin, emulsifier – leticine, functional additives, as well as orange oil, skimmed milk powder and whole milk powder in the following ratio of initial components, wt%: maltitol 12.56–13.04; cocoa butter 9.86–11.05; dry whey concentrate 3.43–4.9; inulin 8.62–9.86; leticin 0.39–0.45; stevia extract 0.03–0.07; orange oil 0.29; skimmed milk powder 10.38; whole milk powder 10.84; as a functional supplement contains vitamin premix, including vitamins A, D3, E, K1, B1, B2, B6, B5, B3, B12, B9, B7, C, in the amount of 1.41 wt.%; and cocoa mass – the rest.

EFFECT: invention is directed to ensuring the daily human need for the necessary vitamins and minerals.
