FIELD: animal and vegetable oils.
SUBSTANCE: invention relates to fat and oil industry. Method of degumming a triglyceride-containing composition, which is a crude vegetable oil or a previously degummed vegetable oil, comprising the steps of: (a) contacting the triglyceride-containing composition with at least one solubilizer, which is a polyhydroxyl compound with an asymmetric molecular structure; (b) removing the gum phase from the triglyceride-containing composition.
EFFECT: invention allows to reduce the phosphorus content in the triglyceride-containing composition, to increase the oil yield, as well as to increase the speed of the degumming reaction.
