FIELD: technological processes.

SUBSTANCE: invention relates to fat and oil industry. Method for producing a low-saturated oily composition comprising: a) mixing a triacylglycerol source with an aqueous solution of a saturate-type enzyme in presence of an emulsifier to produce an emulsion, wherein the triacylglycerol comprises at least one saturated fatty acid residue and at least one unsaturated fatty acid residue, and the emulsifier comprises an alkali metal salt and an unsaturated fatty acid, b) mixing the aqueous acid solution with the emulsion to produce a mixture where the acid is present in an amount sufficient to obtain a pH value of about 1 to 4 to convert the emulsifier into a free unsaturated fatty acid and a salt, and c) separating the mixture to produce an oil phase and an aqueous phase, wherein the oil phase is a low-saturated oily composition. As per the second variant, after step b) the following steps are carried out: c) mixing the aqueous base solution to produce a mixture having a pH of about 4 to 9, d) mixing an enzyme such as a phospholipase selected from PLA1, PLA2, PLC and a combination thereof with the mixture obtained in step (c) for the preparation of a mixture comprising deresined oil and an aqueous phase, e) separating the deresined oil and the aqueous phase to produce separated deresined oil, f) mixing the separated deresined oil with an aqueous acid solution to obtain a mixture comprising an oil phase and an aqueous phase, wherein the acid is present in an amount sufficient to convert the emulsifier into a free unsaturated fatty acid and a salt, and g) separating the oil phase from the mixture obtained in step (f), wherein the oil phase is a low-saturated oily composition.

EFFECT: invention makes it possible to obtain a stable emulsion, from which it is impossible to separate oil.
