FIELD: physics.

SUBSTANCE: device includes a closed heat-insulated chamber with a reflective metal surface. First heat source is installed inside at the top of the chamber, it consists of two tungsten halogen lamps connected in series to lower the temperature of the filament and increase the fraction of radiation in the near-IR region with a wavelength of 0.7–1.0 mcm. Second heat source is installed under the bottom of the chamber, between the second heat source and the bottom of the chamber there is a heat-conducting plate tight to the bottom of the chamber, which provides for heating the food product not exceeding 100 °C using the control unit.

EFFECT: invention provides low-temperature heat treatment of food products.
