FIELD: food industry.
SUBSTANCE: invention refers to food industry and public catering. Disclosed is a method for preparation of vegetables for salad production, including cutting vegetables, wherein vegetables are used in raw form, then cut vegetables are treated with an aqueous solution of the following composition of initial components, wt%: sodium lactate 0.4–1.3; lactic acid 0.1–0.3; acetic acid 0.015–0.045; propionic acid 0.005–0.015; polyhexamethyleneguanidine hydrochloride 0.001–0.003, water – balance, by their complete immersion during 5 to 90 minutes at solution temperature from 10 to 12 °C and titrated acidity from 1.5 to 5.2 degrees, after which processed vegetables are separated from solution and delivered for storage.
EFFECT: invention ensures production of ready-to-eat vegetables for production of lettuce products in order to increase their microbiological safety and storage life.
