FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used for improvement of consumer properties of products to be softened i.e. increase interstructural distances and weaken inter-structure interaction. First of all, foodstuffs for such products include meat (especially of lower varieties), fish, shellfish etc., some types of plant growing products. During the method implementation, the softened product is placed into a container with liquid, the container is sealed, then gas or mixture of gases is supplied into it. Pressure of the gas in the container is smoothly increased, and in the produced water-gas medium the product is saturated with gas, thus regulating this process by changing pressure in the container and duration of the product in this medium. Pressure in the container is then reduced to ambient pressure and the product is removed. Gas used is carbon dioxide or air. Liquid used is water or carbonated water or drinking beverages. Container pressure increase is performed at the rate of not more than 0.1 MPa/min.
EFFECT: use of invention improves quality of resulting product.
