SUBSTANCE: invention relates to ice-cream production equipment. Disclosed is a frozen confectionary product coating cutting tool comprising a frame defining an area for placing an article with at least partially applied coating; set of side blades, containing at least two knives installed on frame opposite to area for product placement, and end knife for cutting of coating on end face of frozen confectionary goods. At that, knives are located on frame with possibility of rotation so that they can be turned into position of coating cutting to cut coating on side of article and are moved from such position to inactive position to allow article to move past knives. Also disclosed is a method for cutting a coating of a frozen confectionery product using said tool.
EFFECT: invention allows to cut coatings from gel of frozen confectionary products both with one layer of coating and with multiple layers and reducing quantity of rejects during cutting.
