FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used for production of edible dishware, mainly for salads, meat products and cold appetizers supply in restaurants, cafes and fast food establishments. Edible dishware includes a base – water, a plasticiser – glycerin, a structure-forming agent, additionally contains citric acid. Wheat starch and wheat offal are used as structure-forming agent. Ratio of components in wt% is as follows: water – 57.1; glycerin – 8.4; wheat starch – 17.1; wheat offal – 17.1; citric acid – 0.3.
EFFECT: invention usage allows to produce edible dishware.
