FIELD: food industry.

SUBSTANCE: group of inventions relates to the food industry. One obtains oilseed cake containing protein, represented by sunflower. Separating extraction cake using gravitational separator, containing separating deck, into first fraction of extraction cake, having protein content higher than content of protein in extraction cake from extraction step, and second fraction, having protein content lower than content of protein in oil extraction cake from stage of production cake. Gravity separator comprises deck divided surface to provide material layer on surface. One performs extraction of fraction with content of protein higher than protein content in oil extraction cake from the extraction cake stage. Use of a gravity separator comprising a separating deck for separating a source oilseed meal containing protein into two fractions, wherein one fraction of oil seed meal contains protein content higher than that of protein in initial extraction oil extraction cake by at least 1 %, 5 %, up to 15 % or up to 20 %, at that, the oilseed crop represents sunflower seeds.

EFFECT: group of inventions provides production of a fraction rich in protein in oilseed crops.
