FIELD: food industry.
SUBSTANCE: invention relates to confectionary industry. One proposes a method for production of marmalade with milk thistle extract nanostructured extract. According to the invention, 100 g of sugar is dissolved in 200 g of water, the mixture is boiled during 10 minutes, then one adds 2 g of agar-agar and cooks for 5 more minutes, pours 50 g of apple puree and brought to a boiling point, cooled down to 60 °C. Then one adds 100 mg nanostructured dry extract of milk thistle in sodium alginate or guar gum and dispensed by molds.
EFFECT: invention is aimed at improvement of marmalade quality and enhancement of biological value of the ready product.
