SUBSTANCE: invention relates to the field of the confectionery industry. Marmalade production method containing nanostructured dry dandelion extract envisages 100 g of sugar dissolution in 200 g of water and the produced mixture boiling during 10 minutes. Then add 2 g of agar-agar and cook for 5 more minutes, pour 50 g of apple puree and bring to a boil, cool down to 60 °C, added 100–250 mg of nanostructured dry dandelion extract in sodium alginate, or in guar gum, or in kappa-carrageenan and bottled.
EFFECT: invention is aimed at production of marmalade of high quality containing nanostructured dry dandelion extract.
