FIELD: food industry.
SUBSTANCE: invention relates to devices for food industry. Baking device (1) for bakery products (preferably, edible products) production contains bakery device frame (21) with baking device body (20) and baking chamber (2) located inside housing (20) of baking device, has endless chain (3) of baking collets, which continuously moves in a circle along substantially closed trajectory and moves through baking chamber (2), wherein said circuit extends from front turning point (5) located in inlet section (4) to rear turning point (6). Chain (3) of baking colts comprises connected to each other bogies (7) of baking collets with openable and closed, in particular unfolding and folded baking collets (8), on chain (3) of baits colts there is a plurality of rollers (9), which roll at least along part of trajectory at least along one longitudinal guide (10) for support and/or direction of chain (3) baking collets. Device has cooling channel (11) through which cooling air flows for cooling said at least one longitudinal guide (10). Cooling channel (11) enters baking chamber (2) in the area of the rear turning point (6) through at least one convection hole (12). Also in the device convective fan (25) is provided for formation of convective flow in baking chamber (2) and direction of cooling air along cooling channel (11), so that cooling air passes through convection hole (12) from cooling channel (11) of said at least one longitudinal guide (10) to create artificial convection, in particular horizontally, in baking chamber (2).
EFFECT: invention allows to create a baking device, in which the cooling medium can be used not only for cooling, but also provides a synergetic effect of artificial convection in a baking chamber.
