FIELD: food industry.
SUBSTANCE: invention relates to control of gas consumption in a bakery device. Disclosed is method of control and/or automatic control of gas flow rate in baking chamber (1) of baking device (2), in which endless chain (3) of baking collets moves along closed trajectory through hole (4) of inlet section from baking chamber (1) at inlet section (5) and through opening (4) of inlet section from inlet section (5) into baking chamber (1) to produce baked, preferably edible products, wherein method comprises following steps: controlled or automatically controlled supply of volume flow (6) of fuel, in particular gaseous fuel, and volume flow (7) of primary air into baking device (2), wherein fuel is burnt in heating device (8) with primary air from volumetric flow (7) of primary air for heating baking chamber (1) and controlled or automatically controlled removal by suction of volumetric flow (10) of suction from baking chamber (1) by means of suction fan, wherein volume balance of volumetric flow introduced into baking chamber (1) is determined, expanding volumetric flow (11), which is expanded inside baking chamber (1), and volumetric flow removed by suction from baking chamber (1), for control and/or adjustment of volumetric flow (10) of suction and/or volumetric flow (9) of convective air, wherein expanding volumetric flow (11), which is expanded inside baking chamber (1), in volumetric balance comprises volume flow (13) of combustion components, formed by combustion of volume flow (6) of fuel with volume flow (7) of primary air, and volumetric flow (14) of steam during combustion, coming out of baking mass during baking, or expanding volumetric flow (11), which is expanded inside baking chamber (1), in volumetric balance consists of volume flow (13) of combustion components, formed by combustion of volume flow (6) of fuel with volume flow (7) of primary air, and volume flow (14) of steam during combustion, leaving the baking mass during baking, and power of suction fan and/or convection fan power is controlled/regulated so that volume flow removed by suction is greater than or equal to sum of introduced volume flow and divergent volumetric flow (11), which expands inside baking chamber (1), so, that introduced volumetric flow and expanding volumetric flow (11), which expands inside combustion chamber (1), are removed by suction, in particular completely, by means of suction fan.
EFFECT: invention consists in creation of baking device with increased efficiency, which leads to optimization of gas flow in baking chamber of baking device, and also consists in exclusion of ingress of gases from baking chamber into inlet section, which can lead to creation of special modes of heating and drying to prevent corrosion of parts baking device.
