FIELD: food industry.
SUBSTANCE: invention relates to winemaking industry. Method of processing wood particles for use in production of alcoholic beverages includes the following steps: (1) washing wood particles with water while stirring at temperature of not less than 60 °C; wherein wood chips can be further annealed; (2) removing water from wood particles; (3) thermal drying of wood particles; (4) calcining wood particles to obtain wood particles in accordance with the invention; (5) additionally possible incubation of proposed wood particles with flavouring liquid, subsequent removal of any coating wood particles flavouring liquid. Also, application of such particles for treatment of alcoholic beverages is described.
EFFECT: method allows to accelerate aging process of alcoholic beverages, as well as to mask undesirable tone in taste and to increase extractivity and reactivity of taste components.
