FIELD: tobacco.

SUBSTANCE: invention relates to a method for secondary fermentation of tobacco raw material for production of smoking and non-smoking tobacco products in order to improve their organoleptic properties, completely or partially made from said tobacco raw material. Method for fermentation of tobacco raw material involves preparation of oak barrel by carbonisation-burning of the inner surface of the barrel at temperature of 170-220 °C, further treatment of the inner surface of the carbonated barrel with a water-alcohol solution of food tannin with an alcohol content of 10-70% and tannin of 5-20% in amount of 1.5 ml/dm and holding the treated barrel for 1-2 weeks, placing tobacco raw materials into the inner space of an oak barrel in an amount of not more than 50% of its volume, sealing the oak barrel and holding the tobacco raw material for 2-7 months at temperature of 18-20 °C and relative air humidity 60-80%. Tobacco raw material is laid with the barrel placed horizontally on a support which enables to rotate the barrel in a sector manner around the horizontal axis with pitch of 60-90 degrees for tobacco mixing. Tobacco mixing is carried out by rotating the barrel at a circular rate of 1-2 sectors a week during the entire fermentation period, with additional treatment of the tobacco-free inner surface of the barrel with a water-alcohol solution of tannin with the above amount.

EFFECT: invention makes it possible to significantly improve organoleptic indices of products: taste-and-flavour profile of smoke for smoking products and taste-and-flavour perception of non-smoking tobacco products.
