FIELD: technological processes.

SUBSTANCE: invention relates to methods of extracting anthocyans from vegetable raw material. For separation of anthocyans, water-and-alcohol extract of blueberries is used. Anthocyan-containing aqueous solution is fed into a chromatographic system pre-washed with acetic acid, consisting of a pre-column and a column, filled with styrenedivinylbenzene sorbent not containing additional functional groups, having pore size from 10 to 60 nm. Volume of the sorbent placed in pre-column is 20–25 % of the volume of the sorbent in the column. Solution containing anthocyans is supplied to the column system in an amount not exceeding 80 % of the total volume of the pre-column and column. Elution is carried out by feeding solution of ethyl alcohol in direction opposite to direction of supply of initial solution containing anthocyans, and target fraction is collected. Sorbent is washed with a solution of acetic acid. Target fraction is evaporated and dried.

EFFECT: invention provides high efficiency of the process while maintaining high degree of extraction and concentration of the end product.
