FIELD: food industry; pharmaceutics.
SUBSTANCE: group of inventions refers to preservation of pharmaceutical, nutraceutical and food products including microorganisms due to provision of microorganisms viability in specified products. Group of inventions includes a dry stable composition and a method for production thereof. Composition contains one or more viable microorganisms, at least 50 wt % of one or more hydrolysed proteins and less than 5 wt % of one or more sugars selected from a group consisting of monosaccharides, disaccharides and combinations thereof, all percentages being based on the total weight of the dry composition. Preferably, the composition does not contain a monosaccharide or disaccharide. Composition can additionally contain one or more oligosaccharides, one or more polysaccharides, one or more salts of carboxylic acid or their combination. Pot life of the composition can be at least 1×1010 CFU/g, loss of viability less than 1 log CFU/g in 3 months at temperature 40 °C and relative humidity of 33 %. Also disclosed is a method of producing a dry stable composition.
EFFECT: inventions provide the possibility of long-term storage of products and pharmaceutical agents containing microorganisms.
