FIELD: food industry.
SUBSTANCE: invention relates to brewing industry. Malt production method includes soaking, barley grain sprouting, unclean malt separation of sprouts and dry malt ripening, wherein when soaking and sprouting, using ECHA corrected aqueous catholyte with pH 7–8 and redox potential Eh = -400…-450 mV stabilized with glycine in concentration of 0.5 wt. % in mixture with low-frequency Fe3O4 and SiO2 with hydrodynamic radii of 716, respectively ± 62 nm and 388 ± 117 nm and total concentration thereof in solution of 10-4 mg/l at a weight ratio of 1/3.
EFFECT: invention makes it possible to intensify malting process and to increase its productivity.
