SUBSTANCE: invention relates to application of fructose-6-phosphate-3-epimerase consisting of amino acid sequence SEQ ID NO: 1, for production of allulose. Present invention also relates to a composition for producing allulose containing fructose-6-phosphate-3-epimerase according to the present invention, and to a method of producing allulose using fructose-6-phosphate-3-epimerase according to the present invention.
EFFECT: invention enables production of high efficiency allulose.
