FIELD: tagatose production.
SUBSTANCE: invention relates to an enzymatic method for producing tagatose. The method includes the steps of (i) converting fructose-6-phosphate (F6P) to tagatose-6-phosphate (T6P) catalyzed by fructose-6-phosphate epimerase (F6PE); and (ii) converting the resulting T6P to tagatose catalyzed by tagatose 6-phosphate phosphatase (T6PP). In this case, the steps (i) and (ii) of the method are carried out in one reaction vessel.
EFFECT: invention provides tagatose synthesis with a high product yield.
