SUBSTANCE: disclosed is a method of producing allulose, involving conversion of fructose-6-phosphate (F6P) to allulose-6-phosphate (A6P), catalysed by allulose-6-phosphate-3-epimerase (A6PE); and conversion of the obtained A6P into allulose, catalysed by allulose-6-phosphatase (A6PP). A6PE contains an amino acid sequence having at least 55% sequence identity to SEQ ID NO: 3 or 6, and A6PP comprises an amino acid sequence having at least 55% sequence identity to SEQ ID NO: 9.
EFFECT: invention provides efficient production of allulose.
