SUBSTANCE: invention relates to confectionery industry. Proposed fat-and-oil component for suppressing the graying of the chocolate-like food product contains 1 wt % or more high-erucic rape oil with high degree of hardening. High-erucic rape oil with high degree of hardening and triglyceride of SSU type are included in any ratio from 5:95 to 40:60, where S is a saturated fatty acid, containing 16 to 22 carbon atoms, and U is an unsaturated fatty acid containing from 16 to 22 carbon atoms. Also disclosed are versions of a chocolate-like food product. Method of producing a chocolate-like food product includes a step for adding said fat-and-oil component to suppress graying to obtain content of triglyceride of SSU type, making from 0.1 to 10 wt % in product, and high-erucic rape oil with high degree of hardening, which makes from 0.01 to 3 wt % in product.
EFFECT: proposed fat-and-oil component containing specified amounts of fat SSU and high-erucic rape oil with high degree of hardening, demonstrates properties of strong resistance to graying.
