FIELD: food industry.
SUBSTANCE: disclosed gum base contains from 30 wt % to 70 wt % elastomer, from 1 wt % to 20 wt % wheat gluten, from 1 wt % to 20 wt % plasticiser, from 5 wt % to 25 wt % of wax and not more than 25 wt % of mineral filler. Said wax preferably has a melting point ranging from 50 to 90 °C. Weight ratio of gluten/plasticiser ranges from 1/3 to 2/3. Also disclosed are chewing gum, a method for production of gum base and method of chewing gum production.
EFFECT: invention is aimed at production of chewing gum with improved organoleptic characteristics while maintaining stability during storage and biodegradability of chewing gum.
