FIELD: food industry.
SUBSTANCE: invention relates to production of alcohol-free beverages from sublimated fruit-and-berry raw materials. Method involves mixing components with water with low deuterium content, holding and filtration. Sublimated powder of fruit-and-berry raw material is used, produced by cryogenic freezing of raw material using coolant, grinding in cryomill, sublimation drying for 15–20 hours to moisture content of 4–5 %, and taken in ratio with water 1:(5–10).
EFFECT: invention usage will allow to increase content of extractive, dyeing and flavoring substances.
