FIELD: food industry.
SUBSTANCE: invention relates to alcohol-free industry, namely to production and stabilization of fruit-and-berry juices used for consumer purposes. Disclosed is a method for the preparation of fruit-and-berry juice with the addition of a vegetable extract as a preservative, which includes preparation of directly squeezed apple juices from Idared, Melba varieties and a mixture of summer varieties, in which from 0.025 to 0.1% of the prepared water extract of bracken fern is dosed while stirring at rate of 10–15 rpm for 5–10 minutes at temperature of 18–22 °C.
EFFECT: invention ensures production of natural fruit-and-berry juice, exclusion of sediment formation and deterioration of the product, improvement of organoleptic indices of fruit-and-berry juice, as well as increase of biological value of the consumer product.
