SUBSTANCE: invention relates to the field of studying the properties of liquids by electrophysical methods, in particular to methods for controlling the oxidation of vegetable oil in the production of drying oil. A method for monitoring the oxidation process of vegetable oil in the production of drying oil by electrophysical methods includes heating the oxidized oil to a temperature of (135-140) °С, while monitoring the progress of oxidation is carried out by continuous measurement in time of the current value of the electrophysical parameter of the oxidized oil - active resistance R, and in this case, the obtained absolute value of R is converted into a relative value graphs are constructed of the dependence of the ratio of the difference of active resistances on time (t) and on the viscosity
