FIELD: biotechnology.

SUBSTANCE: invention relates to biotechnology, in particular to the production of hydrolysates of crushed Jerusalem artichoke tubers. The method involves fermentation of Jerusalem artichoke hydrolyzate, pre-processed in two stages. The Jerusalem artichoke biomass is incubated in 0.1 M sodium acetate buffer for 1 h at 40°C, the pH is adjusted to 5.0 with 0.1 M hydrochloric acid, followed by enzymatic treatment with an enzyme preparation of the recombinant strain of the mycelial fungus Penicillium verruculosum VKPM F-1291, containing endoinulinase, exoinulinase and cellulase for 3 hours at a temperature of 50±5°С in a given amount. The resulting enzymatic hydrolyzate is biotransformed into fumaric acid by adding an immobilized biocatalyst containing cells of the filamentous fungus Rhizopus oryzae F-1032, polyvinyl alcohol and water in a predetermined amount for 42-110 hours at 29-35°С.

EFFECT: invention improves the yield of fumaric acid.
