FIELD: food industry, public catering.
SUBSTANCE: invention is intended for use in food industry and public catering, particularly for the preparation of semi-finished chopped turkey meat wrapped in a plant leaf. Semi-finished chopped turkey meat wrapped in a plant leaf include chopping turkey breast, making minced meat with hemp flour, drinking cow's milk of 2.5% fat content, salt, pepper, drinking water, mixing and wrapping minced meat in pre-processed fresh leaves of savoy cabbage. Stuffed cabbage leaves are poured with broth and stewed for 30 minutes. The quantitative ratio of initial components of the semi-finished product is selected.
EFFECT: improvement of the organoleptic and functional-technological properties of the semi-finished product, dietary properties, reducing the caloric content of the product is ensured.
