SUBSTANCE: intended for use in public catering. A semi-finished minced rabbit meat product is proposed, prepared from minced rabbit meat, food salt, which additionally contains minced beef liver, hemp flour, pasteurized cow's milk 3.2% fat, butter 82.5% fat, fresh onions, ground black pepper and drinking water at the following ratio of initial components, wt.%: minced rabbit meat 56.3-57.1; chopped beef liver mass 15.7-16.2; hemp flour 8.9-9.3; pasteurized cow's milk 3.2% fat 5.4-6.2; butter 82.5% fat 4.3-5.1; fresh onions 4.1-4.7; table salt 0.45-0.49; ground black pepper 0.29-0.35; drinking water, the rest, and the semi-finished minced rabbit meat is baked for 15-20 minutes in a convection steamer.
EFFECT: expansion of the range of minced semi-finished rabbit meat products, a reduction in the duration of the production process, an improvement in the organoleptic and functional and production properties of the minced rabbit meat semi-finished product, an increase in the nutritional value of the minced rabbit meat semi-finished product, as well as an increase in the microbiological safety of minced rabbit meat semi-finished products.
