SUBSTANCE: invention relates to the food industry. The method for preparing a semi-finished product chopped from turkey meat wrapped in a plant leaf is characterized by the fact that it includes grinding meat raw materials consisting of turkey pulp in the form of a breast, compiling minced meat with the introduction of cedar flour, drinking cow's milk 2.5% fat, oil-based emulsion flaxseed, including a beaten chicken egg and linseed oil, food salt, ground black pepper, drinking water, mixing and wrapping minced meat in pre-treated fresh savoy cabbage leaves as follows: savoy cabbage leaves are washed, coarse thickened parts are cut off and lightly scalded with boiling water to give them softness, stewing in the broth for 30 minutes. All components are taken at a certain ratio.
EFFECT: invention allows expanding the range of semi-finished chopped poultry products wrapped in a plant leaf, improving the organoleptic, functional and technological properties of the semi-finished product, imparting dietary properties, and increasing the nutritional and biological value of the product.
