FIELD: food industry; public catering.
SUBSTANCE: invention is related to public catering both for mass nutrition and for dietary nutrition. The proposed semi-finished product, chopped beef liver, is prepared from chopped beef liver, fresh onions, table salt, and ground black pepper. Moreover, the semi-finished product additionally contains hemp flour, fresh zucchini, an emulsion based on hemp oil, including beaten chicken egg and hemp oil, and drinking water. The initial components are taken in a certain mass ratio. Moreover, the semi-finished chopped beef liver product is baked for 10-20 minutes in a steam convection oven.
EFFECT: expanding the range of chopped semi-finished products from beef liver, improving the organoleptic, functional and technological properties of the new semi-finished product and increasing the nutritional value of the semi-finished product.
