SUBSTANCE: invention relates to the food industry, namely to the production of food wheat-triticale-hemp flour from wheat grain, triticale and hemp seeds. Preliminarily, a grinding mixture is made from prepared wheat grain, triticale and hemp seeds. The finished mixture is crushed on roller machines with an axis / axis groove arrangement with a fast roller rotation speed from 4.0 to 6.0 m / s, with a ratio of the circular speeds of fast and slow rotating rollers from 1.5 to 2.5, with the cutting density of rollers from 4 to 9 pieces per 1 cm, with a groove slope from 4.5 to 9%. After grinding, the product is sorted on sieves of various sizes.

EFFECT: use of the invention will improve quality of the technology for processing wheat grain, triticale and hemp seeds to obtain wheat-triticale-hemp flour with a high protein and fat content for bakery and confectionery industries.
