FIELD: food industry.
SUBSTANCE: invention relates to production of flour from triticale-rye-hemp grinding grain mixture. A grinding mixture is prepared in advance from prepared triticale and rye grains, as well as flax seeds in a ratio of 4.6:4.6:0.8. Before grinding the finished triticale-rye-hemp grinding mixture, the triticale and rye grains are first subjected to hydrothermal treatment using the cold conditioning method, moistening to a moisture content of 15-16% and cooling for 8-10 hours. A grinding mixture is made up of hydrothermally treated triticale grain and rye in an amount of 92% by weight. and hemp seeds in the amount of 8% of the mass. The finished mixture is crushed on roller machines with placement of corrugations tip-to-tip with a fast roller rotation speed of 6.0 m/s, with a ratio of circular speeds of fast and slow rotating rollers of 2.5, with a density of cutting rollers of 9 pieces per 1 cm, with an angle of corrugation tips of 9%. Next, the grinding product is sorted on sieves of various sizes.
EFFECT: invention makes it possible to obtain flour with a high content of fat and protein, as well as to expand the range of flour-based food products by using processed triticale-rye-hemp mixture in baking and confectionery industries.
