FIELD: food industry.

SUBSTANCE: invention relates to the food industry, namely the production of food triticale-amaranth flour from triticale-amaranth grinding grain mixture. The method for producing triticale-amaranth flour is characterized by the fact that, first, the feedstock is purified, then a grinding mixture is made from the prepared triticale grain and amaranth grain in ratios of 1:1, 3:2 and 3.5:1.5. Pre-triticale grain before grinding is moistened to a moisture content of up to 15.5-16.0% and softened for 8-10 hours. After that, amaranth grain is added to the prepared triticale grain. The finished grinding triticale-amaranth grain mixture is crushed on 5 tattered systems and 6 grinding systems on roller machines with cut rollers with back-to-back corrugations. In this case, the speed of rotation of the fast roller is from 5.0 to 6.0 m/s, and the ratio of the circular speeds of the fast and slowly rotating rollers is from 1.5 to 2.5. Moreover, the density of cutting rollers is from 7 to 9 pieces per 1 cm, and the slope of the corrugation is from 8 to 10%. Then the grinding product is sorted on sieves of various sizes.

EFFECT: invention allows to expand the range of flour-based food products by using processed grain triticale-amaranth grinding mixture in the baking and confectionery industries.
