FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to public catering, and can be used in the preparation of sweet potato nuggets containing functional ingredients used for prophylactic purposes. To prepare the nuggets, the sweet potatoes are washed, peeled and cut into cubes, salted in Adyghe salt and left for 10 minutes. To prepare the breading, cornflakes crackers, sweet paprika and 100 g of finely grated Cheddar cheese are mixed. 8 quail eggs are shaken separately. Sweet potato sticks are rolled in yacon flour, dipped in eggs, rolled in prepared breading and then baked in a preheated oven at a temperature of 160-180°C for 18-23 minutes. The quantitative ratio of the ingredients has been selected.
EFFECT: expansion of the range of products is provided, the resulting product contains functional ingredients, has a pleasant taste and can be recommended for use by patients with diabetes mellitus.
