FIELD: food industry.
SUBSTANCE: invention relates to the food industry. A method for the production of a granulated sugar-containing product is proposed, including the concentration of the sugar-containing solution and the application of seeds to the granules, the growth and drying of the product granules. As a seed, coffee granules are used, obtained by agglomerating its powder to a size of 0.6-1.2 mm. In the process of growing, a sugar-containing solution enriched with extracts of propolis and cardamom in equal amounts is applied to the seed granules at the rate of 0.05-0.12% by weight of the solution with a concentration of 81.5-83.5% dry matter, with an increase in the size of the seed granules to 1.5-2.5 mm. The size is brought to 3.0-4.0 mm by spraying on the surface of the granules of a sugar-containing solution with a concentration of 81.5-83.5% of solids enriched with maltitol, at the rate of 0.2-0.5% by weight of the solution, followed by drying to a moisture content of 0.3-0.6%.
EFFECT: invention makes it possible to obtain a sugar-containing product with an improved granulometric composition that meets the regulatory requirements.
