FIELD: food industry.
SUBSTANCE: invention relates to the food industry. A method for the production of a granulated sugar-containing product is proposed, which includes concentrating the sugar-containing solution and applying a seed to the granules, building up and drying the product granules. As a seed, granules are used, consisting in equal amounts of sucrose and β-cyclodextrin, which is pre-saturated with peppermint extract, obtained by agglomerating their powder form to a size of 0.5-1.3 mm. In the process of growth, a sugar-containing solution with a concentration of 81-83% of solids, enriched with extracts of valerian and motherwort, is applied to the seed granules. The seed granules are increased to a size of 1.8-2.3 mm, then this size is adjusted to 2.5-4.0 mm by spraying a sugar-containing solution with a concentration of 82.5-84.5% of solids enriched in maltitol on the surface of the granules, with their subsequent drying to a moisture content of 0.3-0.5%.
EFFECT: invention makes it possible to obtain a sugar-containing product with a high granulometric composition, which has an increased nutritional and physiological value.
