FIELD: biotechnology.

SUBSTANCE: invention relates to biotechnology. The invention is a method for producing French snail lyophilisate to obtain French snail lyophilisate comprising collecting French snails that were starving for at least two days, freezing them at a temperature of -1 to -25°C, separating the snail body from the shell, and lyophilising the snail body at a temperature of -40ºC to -50ºC under atmospheric pressure until the surface lowest temperature is provided, then vacuum pumping and pressure reduction down to 15-14 Pa are performed and residual humidity is removed by means of increasing the shelf temperature up to +45ºC, product temperature up to 40°C and the French snail lyophilizate acquires a residual moisture content within an acceptability criterion of between 1 and 4% and demonstrates visual stability, the French snail lyophilizate obtained by means of the method 1 comprising having a dried French snail body to an acceptable residual moisture criterion of between 1 and 4%.

EFFECT: invention provides for obtaining French snail lyophilisate with a higher biologically active substance content, better nutritional value and higher quality with a longer shelf life.
