FIELD: food industry.
SUBSTANCE: method for purification of L-fucose from fermentation broth is proposed, according to which biomass is removed by means of centrifugation and/or filtration from fermentation broth containing L-fucose to obtain a clarified solution. A purified solution is obtained by subjecting the clarified solution to treatment on a cation exchanger and treatment on an anion exchanger. Salts are removed from the purified solution by electrodialysis and/or nano-filtration. In this case, biomass contains cells, which produce L-fucose.
EFFECT: invention provides effective isolation of L-fucose from fermentation broth.
