FIELD: food industry.
SUBSTANCE: group of inventions relates to the food industry; it can be used for control of gram-positive bacteria, including spore-forming gram-positive bacteria, in food products. A composition for control of growth of gram-positive bacteria, including spores of gram-positive bacteria, in a drink contains: (a) mixture of crolequinic acid, hardwickic acid, colavenic acid, and copalic acid and (b) beta-caryophyllene (BCP), wherein the ratio of the specified mixture of crolequinic acid, hardwickic acid, colavenic acid, and copalic acid to the specified beta-caryophyllene is at least 1.1:1 by weight. At the same time, the composition does not essentially contain hexane and dichloromethane. A method for enhancing the efficiency of drink pasteurization, including addition to the drink of the specified composition, a drink in a container, containing the specified composition, and a method for control of growth of gram-positive bacteria, including spores of gram-positive bacteria, in a drink, including addition to the drink of the specified composition, are also proposed.
EFFECT: control of gram-positive bacteria, including spore-forming bacteria, in a drink is provided without impart to it of a bitter taste.
